We wanted to have a very very soft opening, so the best thing we could think of was to just unlock the doors and see what happened. I needed time to test out our new POS system, our fledgling processes, and Chef Bill needed time to work his own culinary routines, find homes for everything and adapt recipes to equipment he had only days before met for the first time.
To our chagrin the tenants in our building figured it out and came in droves to support us (we 3> you all.) Boxes were bought and given to their patrons, those patrons came back and bought stuff for their families. The word over the next few days spread like a little neighborhood wildfire and it impressed us all.
Of course Chef was wondering where the “soft” part of the opening was, but it was an awesome sight to see people who we had never met before become fans.
We normalized over the last two weeks and things are starting to find their homes, stretch legs, and ponder where we are going next. So many things to do, what a future we have ahead of us.
